Compart Duroc Pork Skewers

Ingredients:
- 1 Compart Duroc pork tenderloin, cut into 1.5” cubes
- 1 red onion, cut into chunks
- 1 zucchini
- sliced 1 bell pepper
- chopped Wooden skewers (soaked)
- Marinade: ¼ cup olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic
- minced 1 teaspoon fresh thyme or rosemary
- Salt and pepper to taste
Prep Instructions:
1. Combine marinade ingredients and toss with pork. Chill for 1–2 hours.
2. Thread pork and vegetables onto skewers.
Cooking Instructions:
1.Grill over medium-high heat for 10–12 minutes, turning occasionally, until pork reaches 140–145°F.
2. Let rest 5 minutes before serving.
